Breakfast Cookies



Tonight Ford and I made breakfast cookies. Who doesn't like to eat a cookie for breakfast? And these are supposedly even a little bit good for you. Anyway, we both like them, so here is the recipe if you are interested!

Ingredients:
Non-Stick Spray
1 Large Mashed Banana
1/2 Cup of Chunky Peanut Butter
1/2 Cup of Honey
1 Teaspoon Vanilla
1 Cup of Rolled Oats
1/2 Cup of Whole Wheat Flour
1/4 Cup of Nonfat Dry Milk Powder
2 Teaspoons of Cinnamon
1/4 Teaspoon of Baking Soda
1 Cup of Dried Cranberries or Raisins (I used Craisins)

Preheat oven to 350 degrees. Stir banana, peanut butter, honey and vanilla. In a small bowl combine oats, flour, milk powder, cinnamon, and baking soda. Put the mixtures together. Stir in the craisins. Spray cookie sheet. On cookie sheet drop 1/4 cup globs of the mixture and then spread to about 1/2 inch thick. This is a big cookie! One is like meal to me with coffee. Bake for 14-16 minutes. They last about 3 days, otherwise freeze for up to two months. I usually double the batch! Enjoy!
